Soy Beans
I have heard good and bad about soy. On the one hand you hear soy beans lower LDL (the bad cholesterol), reduce the risk of breast and prostrate cancer, keeps bones strong and help with symptoms of menopause. On the other hand, you also hear about the dangers of soy – how soy increases the risk of breast cancer, does nothing to help with menopause and should be avoided.
Okay so here is what Dr. Mike Roizen and Dr Mehmet Oz (also known as Dr. Oz) say “All the infighting has hidden soy’s real disease-fighting edge: Good polyunsatuated fats, high-quality protein and fiber make it a great substitute for foods known to raise your risk for heart disease. A growing stack of research suggests that soy’s nutritional power comes from the balance mix of vitamins, minerals, isflavones, proteins,fat and fiber in the original bean. So following are the recommended forms of soy products:
SOY NUTS – roasted soy nuts
EDAMAME – another name for the soy bean. At a regular grocery store you can find them in the health frozen food section or sometimes the regular frozen food section. At a health food grocery you might find them fresh. Lightly steam or boil in pods and serve warm.
TOFU – Can use in stir-fry in place of chicken, beef or pork. If you are going to stir-fry be sure to get firm or extra-firm tofu and press the excess water out of it. I usually put it on a plate and put another plate on top and weigh that plate down with a can or two.
TEMPEH – This smoky-flavored soy product can be sliced or grilled. As far as soy products go this one really tastes pretty decent.
SOY CRUMBLES – I haven’t actually ever seen these but the article said you find it in the frozen section and use to replace ground beef in sloppy Joes, chile and spaghetti sauce. I would start out by replacing may 1/4 or 1/2 of the meat with soy at first.
