According to the doctors, eating three or more servings of spinach and other leafy greens slows mental decline due to aging by as much as 40 percent. Spinach has a great deal of good for your brain carotenoids and flavonoids. Also frozen spinach is just as good as fresh spinach for your brain.

Here is some more great advice from dr mehmet oz. Yellow oranges vegetables – carrots, sweet potatoes and winter squash are full of carotenoids, nutrients that fight the DNA damage that can make your body old (or sick) before its time. Researchers think that carotenoids – the plant pigments that also give pumpkins and cantaloupes their rich orange hues – may help protect against that kind of DNA damage that happens with ages.

It used to be that we were not supposed to eat too many carrots because of the sugar content. But I was reading in the Atkins diet book that is okay to eat a lot carrots. Atkins says he never met anyone who got fat eating carrots. My favorite way to eat carrots is dipped in hummus (mashed chickpeas). I also eat pumpkin mixed with a bit of cinnamon, honey and half and half and it is delicious. Here is a tip I got from America’s Test Kitchen – pat the pumkin out on a few layers of paper towels to get rid of the excess water. Your pumpkin recipes will be more creamy.
