Because people who are diabetic are particularly subject to heart disease, raw nuts are an ideal “health food”. Nuts that are especially healthy  might include raw walnuts, almonds, cashews, hazel nuts, pistachios, pine nuts and Brazil nuts.  Roasted peanuts, peanut butter or almond butter are additional choices.</p>
<p><strong>Dark-Chocolate Treats </strong>-  Look for the over 75% with no added sugar dark chocolate. Make sure to check the carbohydrate grams per serving. Buy only the plain or with nuts dark chocolate. Dark chocolate with fillings has too many carbs and too much sugar for diabetics. </p>
<p><strong>Popcorn or popcorn toppings </strong>- Look for recipes for savory or cheesy popcorn or toppings.For convenience try ready-made or microwave kettle corn popcorn. Check that you are in the range of about 15 g of carbohydrate per serving. Put a serving into a mug, pretty bowl or decorative bag.</p>
<p><strong>Fresh Fruit not dried </strong>- Dried fruit has too much sugar. Use fruits that rank low on the glycemic index scale such as apples, oranges, pears, grapefruit, cherries and berries. </p>
<p><strong>Coffee or Tea</strong> &#8211; Infinite varieties of both coffee and tea are available. Around the holidays there are many special holiday blends. </p>
<p><strong>Trail Mix </strong>- Here is a recipe for trail mix that is safe for diabetics though be sure to check how much sugar is in the dark chocolate chips. </p>
<p><em>* 1 cup roasted peanuts<br />
* 1 cup raw or roasted almonds<br />
* 1 cup pumpkin or squash seeds (How To Toast Pumpkin Seeds)<br />
* 2 oz unsweetened coconut<br />
* 1 cup dark chocolate chips</em></p>
<p><strong>Non-sweet food</strong> &#8211; Cheese balls, other gourmet cheeses, unsweetened ham, foie gras paté&#8217;s, caviar, smoked salmon,  canned soups, crackers, imported/gourmet sardines, whole grain crackers.</p>

<p><strong>Reducing Your Risk:</strong></p>
<p>Your weight &#8211; For those at risk because of being overweight, losing even 5 to 7 percent of weight can help. </p>
<p>Grains &#8211; Up your fiber intake by eating more whole grains.</p>
<p>Go lean &#8211; Reduce you overall fat intake, but especially cut your saturated fats.</p>
<p>Our newspaper recently reviewed a new diabetes cookbook called &#8220;The Eating Well Diabetes Cookbook&#8221; by Joyce Hendley and the editors of Eating Well. The book costs $16.95 and it has been nominated for several awards. The recipes and introductory information are aimed at diabetics or those hoping to eat smarter to help prevent diabetes. Full menu ideas are offered as well as lunch box  suggestions. Here is a recipe from the book I tried and it was wonderful. My whole family enjoyed and asked me to make again.</p>
<p><strong><strong><br />
<h3> Diabetes Recipe</h3>
<p>Spicy Mushroom and Rice Soup<br />
</strong><br />
3/4 cup brown basmati rice</p>
<p>1 and 1/4 cups water</p>
<p>1 cup lite coconut milk</p>
<p>3/4 cup reduced sodium chicken broth</p>
<p>1 tablespoon freshly grated orange zest</p>
<p>3/4 cup fresh orange juice</p>
<p>1 tablespoon fish sauce</p>
<p>1 teaspoon Thai Chile Paste or Chinese chile-garlic sauce</p>
<p>2 fresh Thai chili peppers, or serrano chiles stemmed and seeded and minced</p>
<p>2 cups button mushrooms, stem trimmed and caps quartered. (I used the brown mushrooms called Bella and it added good flavor)</p>
<p>2 ounces fresh enoki mushrooms</p>
<p>1/2 cup plus 1 tablespoon chopped fresh basil</p>
<p>1/4 teaspoon salt</p>
<p>1/4 teaspoon pepper</p>
<p>Directions:</p>
<p>Place rice and water in a medium saucepan; bring to a simmer. Cover and cook over low heat until the rice is tender and most of the liquid has been absorbed, 40 to 50 minutes.</p>
<p>About 15 minutes before the rice is ready, combine coconut milk, broth, orange zest and juice, fish sauce, chile paste and chile peppers in a large saucepan. Bring to a boil, then reduce heat to medium and simmer, unvovered, until foamy and a pale golden orange, about 5 minutes. Add enoki mushrooms, if using (these can be expensive so you can leave them out if need) and cook for 1 minute. Stir in 1/3 cup basil, salt and pepper.</p>
<p>Divide rice among  bowls and spoon soup over it. Garnish with remaining basil.</p>

Carbs 34 grams<br />
Protein 7 grams<br />
Fiber 3 grams</strong></p>

<p>She recommends using 2 teaspoons of the dried powdered bark (I use the mexican cinnamon you can buy at the grocery store. It crumbles easily.) steeped in boiling water for 15 minutes. Then sip cooled tea slowly, one hour before each meal.</p>
<p>More recently the  U.S. Department of Agriculture has conducted research which suggests that cinnamon regulates blood sugar, inhibits cancer cells and is anti-inflammatory. The blood sugar part was what caught my eye in the Peoples Pharmacy Column. My husband is pre-diabetic and has high triglycerides, so I am very concerned about blood sugar. The way I work cinnamon into our diet is to make cinnamon flavored coffee. I break up a half a stick of mexican cinnamon and mix it in with the ground coffee before it gets brewed. The coffee tastes great and we get the benefit of the cinnamon.</p>
