Diabetes is a huge problem in our country. I wanted to do this post because I think if people are educated about risk factors they are more likely to recognize if they have the problem. My father-in-law had no idea he was diabetic and stopped at one of those health fairs for a screening. He found out he was diabetic and eventually made some radical changes to his diet and lost quite a bit weight. My husband is pre-diabetic and has been using diet to keep from becoming a full blown diabetic.

Risk Factors for Diabetes:

Having a family history of diabetes

Being overweight or obese

Being sedentary

Ethnicity – Having African, native American, Hispanic or Asian/Pacific Islander heritage

Having a history of gestational diabetes or giving birth to a baby of nine pounds or more.

Reducing Your Risk:

Your weight – For those at risk because of being overweight, losing even 5 to 7 percent of weight can help.

Grains – Up your fiber intake by eating more whole grains.

Go lean – Reduce you overall fat intake, but especially cut your saturated fats.

Our newspaper recently reviewed a new diabetes cookbook called “The Eating Well Diabetes Cookbook” by Joyce Hendley and the editors of Eating Well. The book costs $16.95 and it has been nominated for several awards. The recipes and introductory information are aimed at diabetics or those hoping to eat smarter to help prevent diabetes. Full menu ideas are offered as well as lunch box suggestions. Here is a recipe from the book I tried and it was wonderful. My whole family enjoyed and asked me to make again.




Diabetes Recipe

Spicy Mushroom and Rice Soup

3/4 cup brown basmati rice

1 and 1/4 cups water

1 cup lite coconut milk

3/4 cup reduced sodium chicken broth

1 tablespoon freshly grated orange zest

3/4 cup fresh orange juice

1 tablespoon fish sauce

1 teaspoon Thai Chile Paste or Chinese chile-garlic sauce

2 fresh Thai chili peppers, or serrano chiles stemmed and seeded and minced

2 cups button mushrooms, stem trimmed and caps quartered. (I used the brown mushrooms called Bella and it added good flavor)

2 ounces fresh enoki mushrooms

1/2 cup plus 1 tablespoon chopped fresh basil

1/4 teaspoon salt

1/4 teaspoon pepper

Directions:

Place rice and water in a medium saucepan; bring to a simmer. Cover and cook over low heat until the rice is tender and most of the liquid has been absorbed, 40 to 50 minutes.

About 15 minutes before the rice is ready, combine coconut milk, broth, orange zest and juice, fish sauce, chile paste and chile peppers in a large saucepan. Bring to a boil, then reduce heat to medium and simmer, unvovered, until foamy and a pale golden orange, about 5 minutes. Add enoki mushrooms, if using (these can be expensive so you can leave them out if need) and cook for 1 minute. Stir in 1/3 cup basil, salt and pepper.

Divide rice among bowls and spoon soup over it. Garnish with remaining basil.

Protein 7 grams
Fiber 3 grams
